This unforgettable degustation dining experience combines the very best of local produce and delicious matching wines.

FIRST COURSE

Freshwater Australian Crayfish Trader’s Redclaw butter poached yabbies, Mediterranean vegetable tian, yabbie bouillabaisse foam, basil oil and micro basil

THIRD COURSE

Herron squabs from Superior Game Birds Pittsworth, spiced roasting pan juices, pickled and roasted baby vegetables, pork floss and crackling and Downs Farm fresh cauliflower puree
Stuffed cabbage leaves, with a Moroccan flavoured couscous, harissa sauce and baby broccolini (V)

FOURTH COURSE

Seatonfire Carnival fig tree, filled with a chocolate and port mousse, Carramar caramelised figs, chocolate soil, macaroon crumb, edible flowers (V)
